Ultimate Crunchy Chocolate Chip Nut Cookies
Addictive & crunchy chocolate chip nut cookies.
Equipment
- Stand mixer, or hand mixer
- Microplane
- 2 large cookie sheets lined with parchment
Ingredients
- 2 cups All purposed flour (sifted)
- 1 tsp Baking soda
- 3/4 tsp Salt
- 1 cup Unsalted butter, melted and cooled (2 sticks)
- 3/4 cup Granulated sugar
- 3/4 cup Dark brown sugar
- 1 tsp Vanilla Extract
- 3 tbsp Water
- 1 cup Mini semi-sweet chocolate chips
- 1 cup Assorted chopped nuts
- 2 tbsp Shaved chocolate from block of baking chocolate (use Microplane to shave the chocolate)
- 1 tbsp Demerara sugar (to sprinkle on top of cookies)
Instructions
- Sift all purpose flour, baking soda, and salt in a large bowl and set aside.
- On low speed, use the stand mixer (or hand mixer in a large bowl), and add in the melted butter, both granulated and brown sugars, and vanilla extract. Mix approximately for 45 seconds. Then add in the flour mixture and mix until just incorporated. Now mix in the water. Dough should have a smooth appearance. Then stir in chocolate chips, chopped nuts, and shaved chocolate. Refrigerate dough for at least 30 min.
- Form refrigerated dough into balls (approx. size of heaping tablespoon) and place onto prepared baking sheet. Gently flatten cookie, and sprinkle with the Demerara sugar. Bake in oven for 15-18 minutes, turning pan around halfway through baking. Cookies should be lightly browned. Remove to wire rack and cool (unless you can't wait that long!)
